Green Pepper and Cheese Stuffed Mushrooms

8 oz cream cheese, softened
1 small green bell pepper (capsicum), finely chopped
1 small onion, finely chopped
20-25 large white mushrooms, stems removed
8-10 mushroom stems, finely chopped
butter or vegetable oil for cooking
white pepper
salt to taste

  • Method

Saute onions, capsicum and mushroom stems with a pinch of white pepper in butter until tender.

Drain off excess fat.

Combine the mixture thoroughly with the softened cream cheese.

Stuff each mushroom and bake at 350 deg. F for 10-15 minutes.

Finish under the broiler just until tops are golden.
